Killer Pumpkin Pie

As she promised on Cucina Chatter Radio, Debbi Casini Klein sent us her Killer Pumpkin Pie recipe.

Debbi Casini Klein’s Killer Pumpkin Pie

Makes 2 small pies…

PIE FILLING
1 ¼ cup sugar
1 ¼  tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground cloves
½ tsp salt
2 eggs
1 can pumpkin (15 oz)
1 can CONDENSED milk

CRUST
2 cups graham cracker crumbs
1 ½  cups sugar
1 stick of melted butter

Preheat oven to 425
Make crust first, set aside
Mix sugar, cinnamon, ginger, cloves in bowl….set aside
In large  bowl, beat eggs, add pumpkin, sugar/spice mixture, gradually add condensed milk
Spray Pam on pie pans……pour graham cracker mixture and form  crust — then pour in pumpkin mixture
Bake at 425  for 15 minutes…..it may even burn along the sides, that’s ok…..then reduce to 350  for approx. 45 minutes……..take off any  burn along edges, let sit for 20 minutes…..

    I don’t bake, but I thought I would try this. I bought the crust pre-made and just made the filling.
    First, the image above makes the pie look like chocolate. I set the oven to 420 degrees and the color remained more to the natural color of pumpkin. It had a good taste. Slightly different than the typical pumpkin pie, but good.
