Pesto? Presto!

I wanted to make pesto but had never made pesto before, so I consulted Cousin Lori. After all, she’s known in the family for her pesto sauce.

Lori laughed and said, “Cuz, my recipe is in your book.” Hey, you write a book, read it thousands of times before sending it to the publisher and then never read it again.

Lo and behold, Lori’s recipe is on page 49 of “Gravy Wars.” It’s so simple!

In a food processor combine 1 1/2 cup chopped basil leaves, 1 cup of grated pecorino Romano cheese, 4 cloves of garlic, 3/4 cup of pine nuts, 1/4 cup of walnuts, and a dash of pepper. As you blend it, slowly add in 1 cup of olive oil. Heat the sauce and serve it over your favorite macaroni.
