The following recipe comes from our pal the Mezza Mezz Girl.
Please note that I do not recommend, condone, or encourage sneaky midnight runs to the neighbors’ gardens.
Put your garden grown zucchini to good use! If you don’t grow it, bum it off a neighbor or just help yourself at midnight. This recipe is easy and you have everything you need already.
Zucchini Bread
preheat at 350 – bake 45-50 minutes – makes 2 loaves
2 cups sugar
3/4 cups oil
4 eggs
1 tsp. vanilla
3-1/2 cups flour
1 tsp. baking soda
3/4 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
2 cups grated zucchini
1-1/2 cup raisins
and if you really want to get crazy, some chopped walnutsThrow everything in and mix it all up, there are none of those “baking rules” involved. Just mix it up, grease and flour 2 loaf pans, and put half in each pan.
This bread is so moist and delicious. Keep one for yourself and give one to the neighbor you robbed.
